Sardine Cups
When I’m hosting a dinner, I’m pretty meticulous about my menu. I want to make sure that from start to finish, everything goes together well. The same applies with my wine 🍷 selection and my digestifs which are cocktails served after a meal.
Although I love to serve appetizers, I realized that often my guests were too full to enjoy the whole experience all the way to dessert 🍰🧁 after eating an “appy” plus the main course – I guess as we age, we tend to eat less! That is when I decided to cut down on what I’m serving prior to dinner, of course, it always depends on your main course.
I started creating many different bite-sized hors d’oeuvres. When there’s a large group of people over at your place, bringing out little “bouchés” is always fun as well as replacing that “formal appetizer” dish before dinner. With Easter 🐰 and summer around the corner, there will be many gatherings, backyard parties, big family dinners, receptions, and so on. I really think that this is a delicious way to go without stuffing people to the gills before the main course.

I realize that sardines can be extremely “fishy” even the ones from the cans but I simply love 💖 them! My parents were eating them and as a child, I was fine with sardines. I always enjoyed them without knowing that they are actually super healthy!
Surprisingly, these little guys are one of the highest sources of omega-3s plus vitamins and minerals 💚. They reduce inflammation, lower cholesterol levels, have a high level of calcium and vitamin D and so on. What I like about them is they can be a great addition to so many dishes such as sandwiches, soups, salads, or like today, appetizers. These alone are some great reasons to make this Sardine Cups recipe.
Every time I mention “sardines” to David, his reaction is “eww” and then “cough, cough, cough” to finalize with him saying “kitty breath” with a lisp to it like Sylvester the cat 🐱. Yeah, yeah… funny man! Jokes aside though, not everyone likes sardines so a word of advice, ask your guests before serving. On the bright side, if your crowd loves them then go ahead with this delicious Sardine Cups recipe…

Sardine Cups

Ingredients
- 24 (3" x 3") egg wonton wrappers
- 2 cans (100g each) slightly smoked sardines in olive oil, drained
- 2 ounces light cream cheese, softened
- 2 tbsp. mayonnaise see Recipe
- 1 tbsp. red peppers, finely chopped
- 1 tbsp. freshly squeezed lemon juice tips & tricks
- 1/2 tbsp. fresh chives, finely chopped plus more for garnish tips & tricks
- 4-5 dashes hot sauce such as Cholula®, or more to taste plus more when serving
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 1 pinch ground Himalayan pink salt
- sweet paprika, for garnish *optional
Directions
- Preheat oven to 350ºF
- Fit wonton wrappers into each hole of a greased mini muffin tin. Spray wontons lightly with cooking spray.
- Transfer to the preheated oven and bake for 8 to 10 minutes or until golden and crispy.
- Remove them from the heat, cool for 2 minutes and then remove from the pan.
- While the wrappers are baking, in a bowl combine sardines, cream cheese, mayo, red peppers and lemon juice; stir and mash.
- Add chopped chives, hot sauce, freshly ground black pepper and salt; stir. Taste and adjust if needed; set aside.
- When wrappers are cool, fill (*see footnote) with the sardine mixture and garnish with paprika, chives and a couple drops of hot sauce.
