Ingredients

  • 24 (3" x 3") egg wonton wrappers
  • 2 cans (100g each) slightly smoked sardines in olive oil, drained
  • 2 ounces light cream cheese, softened
  • 2 tbsp. mayonnaise see Recipe
  • 1 tbsp. red peppers, finely chopped
  • 1 tbsp. freshly squeezed lemon juice tips & tricks
  • 1/2 tbsp. fresh chives, finely chopped plus more for garnish tips & tricks
  • 4-5 dashes hot sauce such as Cholula®, or more to taste plus more when serving
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 1 pinch ground Himalayan pink salt
  • sweet paprika, for garnish *optional

Directions

  • Preheat oven to 350ºF
  • Fit wonton wrappers into each hole of a greased mini muffin tin. Spray wontons lightly with cooking spray.
  • Transfer to the preheated oven and bake for 8 to 10 minutes or until golden and crispy.
  • Remove them from the heat, cool for 2 minutes and then remove from the pan.
  • While the wrappers are baking, in a bowl combine sardines, cream cheese, mayo, red peppers and lemon juice; stir and mash.
  • Add chopped chives, hot sauce, freshly ground black pepper and salt; stir. Taste and adjust if needed; set aside.
  • When wrappers are cool, fill (*see footnote) with the sardine mixture and garnish with paprika, chives and a couple drops of hot sauce.

Notes

Footnote: Fill up strictly the amount you'll be serving otherwise they’ll get soggy if they're not eaten right away.
