egg wonton wrappers

(100g each) slightly smoked sardines in olive oil, drained
2
ounces
light cream cheese, softened

red peppers, finely chopped

tbsp.
freshly squeezed lemon juice

fresh chives, finely chopped plus more for garnish

hot sauce such as Cholula®, or more to taste plus more when serving
freshly ground mixed peppercorns, to taste

ground Himalayan pink salt

Directions
Preheat oven to 350ºF
Fit wonton wrappers into each hole of a greased mini muffin tin. Spray wontons lightly with cooking spray.
Transfer to the preheated oven and bake for 8 to 10 minutes or until golden and crispy.
Remove them from the heat, cool for 2 minutes and then remove from the pan.
While the wrappers are baking, in a bowl combine sardines,
cream cheese
,
mayo
, red peppers and
lemon juice
; stir and mash.
Add chopped
chives
, hot sauce, freshly ground black pepper and salt; stir. Taste and adjust if needed; set aside.
When wrappers are cool, fill (

) with the sardine mixture and garnish with paprika,
chives
and a couple drops of hot sauce.
