It’s always nerve wracking to meet your partner’s family for the first time. You don’t know what to expect from both sides. When I met David’s parents and his Oma (grandmother), it was an instant mutual liking. The same thing happened when David met my family although most of them don’t speak English while my husband’s knowledge of the French language is quite limited.
 
I got along very well with his mother, father and grandmother, it was always fun to get together. Before David’s father got sick with Parkinson’s, he wanted to make his signature dish for us; Peach Cobbler! Unfortunately, we never had the opportunity to savor it… he left us 7 years ago now!
 
A couple of years later, I decided to give this dessert a try and I was extremely pleased with the results considering I never made it before. It’s a lovely way to enjoy peaches at their prime. With a light dough, this Peach Cobbler is quite scrumptious! This recipe is very easy to make. In the fruit mix, I add a little Peach Schnapps to accentuate the flavor and richness. I like to serve this lovely dessert with a generous scoop of No Churn Vanilla Bean Ice Cream… yum!
 
This Peach Cobbler is a nice treat to serve this summer. Simple and yet so delicious, I’m sure it will be enjoyed by your family. As David and I savor this recipe, we sure would love to have his father making it for us… We miss you Mr. Bittner Norm…

Peach Cobbler

Served warm with a nice big scoop of vanilla ice cream, this Peach Cobbler is a delicious dessert to enjoy this summer while the peaches are in season.

Ingredients
  

FRUIT MIX

  • 8 large fresh peaches, peeled, pitted and sliced
  • 1/4 cup Peach Schnapps liqueur
  • 1/4 cup brown sugar
  • 1/2 tbsp. freshly squeezed lemon juice tips & tricks
  • 1 tbsp. cornstarch
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 2 tbsp. unsalted butter

DOUGH

  • 1 cup unbleached all-purpose flour
  • 1 tsp. baking powder
  • 1/2 cup granulated sugar
  • 1/2 tsp. ground Himalayan sea salt
  • 3/4 cup unsalted butter, room temperature and cut into pieces tips & tricks
  • 1/2 cup 35% heavy cream, plus 2 tbsp. for brushing

TOPPING

  • 2 tbsp. granulated sugar
  • 1 tsp. ground cinnamon
  • 1/4 cup unsalted butter, cut into small pieces for top

Directions
 

FRUIT MIX

  • Preheat oven to 375ºF.
  • In a large bowl, combine peaches, peach schnapps, brown sugar, lemon juice, cornstarch, cinnamon and nutmeg; stir to coat and set aside.
  • In a large saucepan over medium-low heat, add the 2 tbsp. butter and when melted, add peach mixture. Stir well and simmer gently for 5 minutes. Transfer the mixture to a 2-quart casserole.

DOUGH

  • In a medium bowl, add flour, baking powder, sugar and salt; whisk until mixed. Add ¾ cup butter and with a pastry dough blender, cut butter in until the mixture is crumbly; set aside.
  • Pour ½ cup heavy cream in the dough and stir just enough so the liquid is absorbed – don’t overdo it. Spoon the dough over the peach mixture and gently spread it out with a spatula. Pour 2 tbsp. heavy cream over and brush on evenly.
  • Sprinkle sugar-cinnamon topping over the cobbler before placing small pieces of butter all over the top (¼ cup).
  • Place the casserole on a baking sheet in case it overflows and transfer to the preheated oven. Bake for 40 to 45 minutes or until the fruit is bubbling and the top is nice and golden brown.
  • Remove from the heat and let it sit for 5 minutes before serving with vanilla ice cream.

TOPPING

  • In a small bowl, combine sugar and ground cinnamon.
