I have to wait all year to make my favorite summer recipes using fruits and vegetables. Of course, I can always buy them frozen but the taste is not the same… It misses the freshness, the texture is slightly off, it costs more 💰 plus the vitamins are reduced during the freezing process.
 
Our refrigerator throughout the hot summer months is a juggling act 🤹‍♂️. The crispers are full of deliciousness! Often, I have to rely on our bar fridge to store more fruits and veggies. Like a kid in a candy store, I can’t get enough of the fresh produce!
 
Berries are among them and here, in British Columbia 🍁, they grow in our backyard. I make my Raspberry Cream Cheese Rolls, Bumbleberry Pie, Strawberry Shortcake, Blueberry Cake, and many others including this one… Mixed Berry Crisp!
 
Extremely easy to make, this tasty dish is the perfect summer recipe! It takes less than 10 minutes ⏳ to prep, half-an-hour to bake, and the longest 15 minutes of waiting to allow it to cool off before serving it with a generous scoop of vanilla ice cream!
 
First, the Mixed Berry Crisp filling has to be made which is a simple combination of strawberries, blueberries, lemon 🍋, sugar, cornstarch and vanilla before spooning on the topping. As I mentioned above, we buy a lot of berries and to keep them longer, here’s a great tip to know… Berries • How to Keep Them Longer
 
The topping has a gorgeous mixture too! After stirring the dry ingredients well, room temperature melted butter 🧈 is poured over. It’s important everything is nicely coated and moistened. Sometimes brown sugar can clump up so simply crush it down with the back of your spoon.
 
When the oat mixture is no longer dry, the topping is spooned 🥄 evenly over the berries, making sure they’re covered completely… we don’t want any fruit to be exposed. It’s baked until the top is golden brown… easy, peasy!

Ingredients
  

FILLING

  • 3 cups strawberries, washed, hulled and sliced tips & tricks
  • 2 cups blueberries, washed
  • 1 tbsp. freshly squeezed lemon juice tips & tricks
  • 1 tsp. lemon zest
  • 3/4 cup granulated sugar
  • 3 tbsp. cornstarch
  • 1 tsp. pure vanilla extract

TOPPING

  • 1 cup rolled oats
  • 3/4 cup unbleached all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. ground Himalayan pink salt
  • 1/2 cup unsalted butter, melted

Directions
 

  • Preheat oven to 350ºF and lightly grease a large pie plate with cooking spray; set aside.
  • In a large bowl, combine berries, lemon juice and lemon zest. Stir the ingredients before adding sugar, cornstarch and vanilla extract. Mix well and transfer to the prepared pie plate; set aside.
  • In another bowl, blend together oats, flour, brown sugar, cinnamon, and salt. Pour over melted butter and stir until coated and no longer dry.
  • Spoon oat mixture on top of the berries, making sure to covers the entire surface.
  • Transfer pie plate to preheated oven and bake for 30 or until the top is golden brown. Allow to cool 15 minutes before serving.
