FILLING
- 3 cups strawberries, washed, hulled and sliced tips & tricks
- 2 cups blueberries, washed
- 1 tbsp. freshly squeezed lemon juice tips & tricks
- 1 tsp. lemon zest
- 3/4 cup granulated sugar
- 3 tbsp. cornstarch
- 1 tsp. pure vanilla extract
TOPPING
- 1 cup rolled oats
- 3/4 cup unbleached all-purpose flour
- 1/2 cup brown sugar
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground Himalayan pink salt
- 1/2 cup unsalted butter, melted
Preheat oven to 350ºF and lightly grease a large pie plate with cooking spray; set aside.
In a large bowl, combine berries, lemon juice and lemon zest. Stir the ingredients before adding sugar, cornstarch and vanilla extract. Mix well and transfer to the prepared pie plate; set aside. In another bowl, blend together oats, flour, brown sugar, cinnamon, and salt. Pour over melted butter and stir until coated and no longer dry.
Spoon oat mixture on top of the berries, making sure to covers the entire surface.
Transfer pie plate to preheated oven and bake for 30 or until the top is golden brown. Allow to cool 15 minutes before serving.
