By the time we’re done putting up the decorations 🎄, baking and cooking, and with our shopping lists although there’s always last-minute gifts to buy, we’re exhausted! We still have to wrap the presents, clean the house and finish the last details before the 24th of December.
 
Being less than a week from Christmas, our energy level can be low 🥺 so we might not feel like spending too much time in the kitchen. Without compromising on delicious meals, we still want something quick and easy to make plus it’s even better if it’s a one-pot recipe like this one… Cod in Puttanesca Sauce!
 
This is incredibly tasty! Far from being bland, in 30 minutes, you can have this flavorful dinner that can be enjoyed with crusty bread or if you like, spoon the fish and sauce over rice 🍚 or pasta. It’s a great Italian recipe to add to your folder!
 
Despite the fact that I use cod, this Neapolitan sauce can be simply served over spaghetti 🍝 which makes the cooking time even shorter. Made with anchovies, tomatoes, olives and capers along with onions, garlic and wine, this sauce is very flavorful!
 
I use 4 large fillets in my Cod in Puttanesca Sauce but there’s enough sauce for 6. Depending on the thickness, it can take from 12 to 15 minutes ⏰ to cook them. To see when they’re done, the fish will get opaque and become white plus the internal temperature should read between 140ºF to 145ºF. Another way is to use a fork at its thickest part of the fish and if it flakes easily, it’s cooked.
 
This Cod in Puttanesca Sauce is a perfect 30-minute recipe to make when time is in short supply or just want something delectable quick! I like to serve it as is with crusty bread 🍞 such as ciabatta or artisan. It’s a lovely one-pot meal to have on hand!

Cod in Puttanesca Sauce

This delicious 30-minute Cod in Puttanesca Sauce recipe is another great one to have on hand when you’re short on time!

Ingredients
  

  • 4 large cod fillets, patted dry
  • ground Himalayan pink salt, to taste and divided
  • freshly ground black pepper, to taste and divided (I always use mixed peppercorns)
  • 1 tbsp. olive oil tips & tricks
  • 1/2 cup yellow onions, chopped
  • 2 ounces (1 can) anchovies in olive oil
  • 1/4 tsp. red pepper flakes, or to taste
  • 1 can (2.25 oz.) sliced black olives, drained *see footnote
  • 1/4 cup capers, rinsed and drained
  • 4 large cloves garlic, pressed
  • 1/2 cup dry white wine such as Pinot Grigio or Chardonnay
  • 4 cups (about 8) Roma tomatoes, concassées tips & tricks
  • 1 tsp. Italian seasoning see Recipe
  • 1/4 cup chopped parsley, for garnish tips & tricks

Directions
 

  • Season cod fillets on both sides with salt and pepper; set aside.
  • In a large skillet over medium heat, add oil. When hot, add onion and sauté for 2 minutes.
  • Add anchovies including the oil from the can, red pepper flakes, olives and capers; stir and cook for 2 minutes.
  • Add garlic and sauté for 30 seconds. Add wine and simmer for 2 minutes.
  • Add tomatoes and season with salt and pepper. Cook for 8 minutes but 2 minutes before time is up, add Italian seasoning; cook for the remaining time.
  • Add seasoned cod and spoon sauce over. Cover, reduce heat to medium-low, and, depending on the thickness, simmer for 12 to 15 minutes. Spoon more sauce halfway through cooking.
  • Garnish with fresh chopped parsley and serve with crusty bread.

Notes

Footnote: Substitute 1/2 cup Kalamata olives
