According to “Wikipedia”, a side dish may be some type of vegetable (salad is considered a side dish) and a starch along with the main protein. But what about when a side dish turns into a more “complex” composition…
 
In this video, the meaning of a side dish is totally out of bounds and isn’t that what cooking is all about? – innovative, creative and out of your comfort zone. This Smoky Bacon Creamed Corn is a pretty diverse combination for a “side dish”. It has vegetables, dairy, meat and seasoning.
 
Let’s start with the meat… Bacon is so awesome! I don’t use bacon in every dish but I have to say that this ingredient brings many recipes to a new level of flavor. Not only do I use bacon in savory dishes but also in dessert recipes. I love bacon!
 
Now that I’ve established my love for bacon, there’s another ingredient that I really, really enjoy… cheese! As I’ve shared with you in a previous blog, the nickname that my friend Richard gave me is “Minnie Mouse” and I’m sure I don’t really need to explain. As David has been saying, he’s never eaten so much cheese in his whole life since we’ve been together. Now, that makes him “Mickey”… lol!
 
Creating this recipe over 15 years ago was a cake walk for me. I took my favorite food items, mixed them with some corn (I tried other veggies but corn was definitely the right choice), plus some seasonings and voilà, I got my Smoky Bacon Creamed Corn recipe!
 
Let’s not fool ourselves… this is not a “low-cal” dish! Even though its rich, this side dish is a perfect accompaniment for many proteins such as pork, chicken or a nice grilled steak on the BBQ. Let me tell you that after you try this Smoky Bacon Creamed Corn recipe, you’ll be making it more often than you’d think.

Smoky Bacon Creamed Corn

Ingredients
  

  • 2 slices bacon, cooked and crumbled tips & tricks
  • 1/2 tbsp. unsalted butter tips & tricks
  • 2 tbsp. onions, finely chopped
  • 1/4 cup red peppers, finely chopped
  • 1/2 large jalapeño pepper, seeded, ribs removed and finely chopped
  • 1 can (12 oz.) peaches & cream kernel corn, drained
  • 1/4 cup 35% heavy cream (substitute half-and-half)
  • 4 ounces herb & garlic cream cheese
  • 1/2 tsp. freshly ground black pepper, or more to taste (I always use mixed peppercorns)
  • 1/8 tsp. smoked paprika

Directions
 

  • In a medium saucepan over medium heat, add butter. When it sizzles, add onions and sauté for 1 minute. Add red peppers and jalapeño peppers; sauté for 2 minutes.
  • Add corn kernels, half of the crumbled bacon, heavy cream and cream cheese. Stir until well blended; season with black pepper and smoked paprika.
  • Reduce the heat to low and cook for 10 to 15 minutes or until the cheese thickens, stirring often.
  • Just before serving, sprinkle on the remaining crumbled bacon.
