Once in a while I have that urge for something sweet, especially chocolate… c’mon I’m sure I’m not the only one. There’s always dark chocolate in the pantry for those urgent cravings. Other times though these cravings get more sophisticated and from simple chocolate pieces they turn into bars. Who doesn’t like a nice sweet chocolate bar every now and then? It’s always a great treat to enjoy anytime.
 
With Halloween around the corner, this is the perfect excuse to try to make homemade chocolate bars. So far I’ve shared my Grandma’s Crunchie Bars, Dulce de Leche Turtles Chocolates, Reese’s Peanut Butter Cups and here’s another one for you… my Bounty Chocolate Bites! They taste virtually identical to the ones from the store. The difference is I use dark chocolate instead of milk but you can choose the kind you enjoy most. Also think about it… there’s no added preservatives – BONUS!
 
As I mentioned, the taste is the same but visually, they are not. These are not bars but bites which I prefer. It seems that they last longer… well that’s what I like to think anyway. Here’s a cute story about my Bounty Chocolate Bites. I made some recently and decided to give most to our friend Les. As I’m leaving our place to deliver them to his wife Nitsa, David intercepted me and grabbed a few… lol! I mean c’mon now, when ever he wants some, he knows very well that I will make them for him… and for me!
 
I’m sure you’ve had a Bounty Bar before but if not, it’s a delicious combination of coconut and chocolate. The only “trick” that I’ll give you is to use a mold for your “treats”… These Bounty Chocolate Bites are a nice snack to enjoy anytime without any tricks… lol!

Bounty Chocolate Bites

Bounty Chocolate Bites

These Bounty Bites are perfect anytime especially for Halloween or when you have the craving for chocolate and coconut!

Total Time 2 hours

Ingredients
  

  • 2 cups sweetened coconut flakes
  • 2/3 cup sweetened condensed milk
  • 1 tbsp. organic coconut oil tips & tricks
  • 1/4 cup icing sugar
  • 1/2 tsp. pure vanilla extract
  • 1/8 tsp. ground Himalayan sea salt
  • 7 ounces dark chocolate

Directions
 

  • In the bowl of a food processor, add coconut flakes, sweetened condensed milk, coconut oil, icing sugar, vanilla, and sea salt.
  • Process until the ingredients are well blended and the mixture sticks together, scraping the sides of the bowl.
  • Place a 24-square silicone mold on a baking sheet lined with a silicone mat.
  • Spoon coconut mixture in each square, pressing down to compact and levelled out. If you don’t have a silicon mold, wet your hands and form squares with the mixture.
  • Transfer to the freezer for 1 hour or until firm.
  • 15 minutes before time is up, place dark chocolate in a double boiler and slowly melt it, stirring often.
  • Remove the coconut squares from the freezer and unmold them.
  • Dip one at a time in the melted chocolate, coat well and place them on a silicone mat.
  • Transfer to the refrigerator until they harden, about 30 minutes.
