Roasted Red Pepper Vinaigrette

I love salads! It can be a green salad with fresh veggies or strictly vegetables like in a Greek Salad, or a seafood salad such as the popular Crab Louie, an unconventional one like Tabbouleh, and others like Coleslaw, Caesar, Jicama Mango Pepper, and so on.
 
When it comes to salads with lettuce, most of the time they need a dressing or vinaigrette. This is probably one of the first things I made from scratch when I moved out from my parents place. I didn’t have a lot of money so buying the premade ones at the store was pricey. That is when I decided to make them at home. I created a few of them including this incredible one… my Roasted Red Pepper Parmesan Vinaigrette!
 
It’s such a lovely dressing! I use fresh ingredients like chives, oregano, and rosemary. As the title indicates, there’s also roasted red peppers. I certainly don’t buy them in the jar because it’s insanely easy to make them at home for a fraction of the cost. Here’s the link to roast your own… How to Roast and Peel Peppers
 
When I created this recipe back then, there was one ingredient that wasn’t in the recipe – as I said, money wasn’t flowing well and I was on a tight budget. Later on in life, adding this to my Roasted Red Pepper Parmesan Vinaigrette made a huge delicious impact! It’s Parmigiano-Reggiano cheese. Oh my! You can skip it but if you can afford it, I highly recommend adding this ingredient… it just wraps this vinaigrette up so nicely.

Roasted Red Pepper Vinaigrette

Roasted Red Pepper Parmesan Vinaigrette

This is absolutely delightful! It's fresh, colorful and so tasty... it will complement and enhance your salad!

Ingredients
  

  • 1/2 cup roasted red peppers, roughly chopped tips & tricks
  • 3/4 cup extra virgin olive oil tips & tricks
  • 2 1/2 tbsp. balsamic vinegar
  • 2 tbsp. honey tips & tricks
  • 1 large clove garlic, pressed
  • 1 tbsp. fresh chives, chopped tips & tricks
  • 1/2 tbsp. fresh oregano
  • 1 tsp. fresh rosemary, finely chopped
  • 1/4 tsp. hot paprika
  • 1/4 tsp. ground Himalayan sea salt, or to taste
  • 1/4 tsp. freshly ground black pepper, or to taste (I always use mixed peppercorns)
  • 1/4 cup Parmigiano-Reggiano cheese, grated *SEE FOOTNOTE

Directions
 

  • In the jar of a blender, combine all the ingredients; process until smooth, about 30 to 45 seconds. Taste and adjust seasoning if needed.
  • Pour the vinaigrette in a bowl or a measuring cup, cover and transfer to the fridge for at least 1 ½ hours to let the flavors blend and chill.
