There are many meals we grew up with that we continue enjoying as adults. We also like to share these meals with our partners, kids 👨‍👩‍👦‍👦 and friends. This is like sharing a special part of us with loved ones and often this is how “new” traditions start!
 
There are also meals that we could’ve had just a couple of times as a youngster and they had an impact on us. Perhaps your mother or father forgot all about them, but you still remember it like it was a meal that was served often. That is what happened with me and my mother… 👵
 
I remember a particular dish that she made just a couple of times and it was delish! It was Stuffed Baguettes! It wasn’t anything fancy but it was “yummy in my tummy” 😋! I asked her about this dish and after a few – “I don’t’ remember!” – “Are you sure I made it?” – “When did I make it?” – I finally got an – “OH YEAH, I remember now…!”. What a relief it was because I thought for a second that it could’ve been my imagination! But even my imagination couldn’t come up with something so simple with so many flavors at such a young age.
 
After my mother dug into her recipe notes – that’s a scary 😳 place to go… There’s no binder, just a couple of note books plus a stack of yellowish paper with her hand writing that she can somehow find her way through… oh my! Anyhow, she finally found it! This piece of paper had an “unidentified” stain on it but there it was, that simple dish she made over 40 years ago that I still recall clearly… well clear enough anyway.
 
So after she gave me the Stuffed Baguettes recipe, I made it but after all these years of experimenting with new spices and flavors, the dish was slightly disappointing! As you guys should know by now, I had to recreate this recipe to meet my “adult standard” – if there is such a thing? 🤔 – and today I’m proud to share this simple recipe with you that delivers deliciously!
 
The meat mixture is bacon and ground beef sautéed with onions and garlic. To this, there’s seasonings and cream of tomato soup 🍅 that go in. You can either use a can or simply make my homemade soup recipe. The mixture is scooped into the hollowed out bread, then topped with tomatoes and cheese before being grilled in the oven… easy, peasy and yummy!
 
These Stuffed Baguettes are a great dish for either lunch or dinner with a nice salad 🥗 on the side. They are quite filling and so easy to make. If you want to go a step further and make your own baguettes, here’s the recipe for it… French Baguettes.

Stuffed Baguettes

With a combination of flavorful ingredients, this open faced sandwich sets itself apart from others! It is a simple recipe that delivers deliciously!

Ingredients
  

  • 2 loaves French baguettes (about 9-inches long), halved lengthwise and middle scooped out see Recipe
  • 2 slices bacon, finely chopped
  • 1 lb. lean ground beef
  • 1/4 cup red onions, finely chopped
  • 1 large clove garlic, pressed
  • 1 can (10 oz.) cream of tomato soup with basil & parmesan see Recipe
  • 2 tsp. Worcestershire sauce
  • 2 tsp. hot sauce such as Cholula®, or more to taste
  • 1/2 tsp. ground cumin
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 1 large tomato, washed and thinly sliced tips & tricks
  • 1 cup sharp Cheddar cheese, grated
  • 1/2 tbsp. fresh parsley, chopped tips & tricks

Directions
 

  • Preheat oven to 350ºF.
  • In a large skillet, add bacon, turn the heat on medium, and sauté until halfway cooked.
  • Add ground beef and cook until no longer pink, about 3 minutes.
  • Add onions and sauté until translucent, about 2 1/2 minutes.
  • Add garlic and sauté for 1 minute.
  • Add cream of tomato soup, Worcestershire sauce, Cholula, cumin and black pepper. Stir all the ingredients very well and bring to a simmer; cook for 5 minutes.
  • Meanwhile, cut the baguette in half lengthwise and scoop out the crumb. Place halves on a baking sheet lined with a silicone mat; set aside.
  • Scoop the tomato-beef mixture into the center of each half. Cover with sliced tomatoes and then cheese. Sprinkle chopped parsley on top.
  • Transfer the baking sheet to the preheated oven and cook for 10 to 15 minutes or until the cheese is melted.
  • Remove from the heat and let it stand for 5 minutes before slicing and serving. Serve it along with a salad.
