Strawberry Salad
During the summer time, it seems like people eat more salads. Perhaps it’s the freshness of the produce or because the weather is getting warmer and lighter meals are requested more often. It doesn’t matter… What does matter though is that eating salads is healthy 💚!
This is how I started my video and the reason why I wanted to write it again is because to me eating a little salad every day helps the body function properly. Of course, I’m sure there’s no need to mention that you need to wash your produce including the organic ones with a natural “Fruit & Veggie Wash”. I don’t want or need pesticides, wax, dirt or other unwanted things in my salad! Now when it comes to the strawberries 🍓, here’s a great trick to keep them longer. In general, we like some sort of fruits in our salads 🥗. I say “in general” because I was shocked when my girlfriend Valeria back in Toronto once told me she didn’t enjoy a salad with fruits in it. Of course I don’t want to eat a Fruit Salad unless it’s for dessert but sometimes it helps to make things more interesting such as in the recipe I’m about to share with you… my Strawberry Salad!
We eat a lot of salad and it’s nice to add a twist to it. I like to think outside of the box with my recipes and this is one of them. My perfect bite is a little bit of spinach with a strawberry slice and a small piece of goat cheese… now that’s a little bit of heaven 😇! The mix of sweetness with a little tart makes this Strawberry Salad a summer favorite.

Strawberry Salad

Ingredients
- 1 tbsp. sesame seeds, toasted
- 2 tbsp. white vinegar
- 2 tbsp. champagne vinegar
- 1/4 cup extra virgin olive oil tips & tricks
- 1 tbsp. balsamic vinegar
- 1/4 cup granulated sugar
- 1 tbsp. poppy seeds
- 1/4 tsp. mild paprika
- 1/4 tsp. Worcestershire sauce
- 1 tbsp. red onions, finely chopped tips & tricks
- 1/2 tsp. freshly ground black pepper, or to taste (I always use mixed peppercorns)
- 1/4 cup slivered almonds, toasted tips & tricks
- 1 cup strawberries, washed, hulled and sliced tips & tricks
- 3 cups baby spinach leaves, washed and dried
- 2 tbsp. crumbled goat cheese, or more to taste
Directions
- In a small saucepan over medium heat, add sesame seeds and sauté until light golden brown, about 5 minutes, stirring and tossing constantly. Remove from the heat and set aside.
- In a small bowl, combine white vinegar, champagne vinegar, olive oil, balsamic vinegar, sugar, poppy seeds, paprika, Worcestershire sauce, red onions, sesame seeds and freshly black pepper; whisk together until sugar dissolved. Cover and chill for 1 hour.
- Meanwhile, in a small skillet over medium heat, add almonds and sauté until golden, about 5 minutes. Remove from the heat and set aside.
- In a large bowl, toss spinach leaves, strawberries, and almonds. Pour dressing over salad and toss. Sprinkle with goat cheese.
