When we reach the end of the month, it’s Halloween 🎃. The next celebration after that is the Christmas Holidays🎄…
 
I don’t mind October as long as it’s sunny 🌞 and somewhat warm but I still have a nostalgic attitude. I have a hard time saying goodbye to summer until next year. To make a smooth transition between those two seasons, I like to make this recipe… my Pork Chops with Pineapple BBQ Sauce!
 
This is incredibly delicious! What makes it so delightful is the sauce with its gorgeous combination of ingredients! There are onions 🧅, red peppers as well as jalapeño peppers, and of course, pineapple chunks and juice along with ginger, garlic and BBQ sauce, just to name a few.
 
This colorful Pork Chops with Pineapple BBQ Sauce recipe is so tasty! I like using pork although chicken 🐓 is another option! The sauce is not spicy at all but with the added jalapeño peppers and minced ginger, it has just a slight kick to it.
 
What really brings serious flavor 🤩 to it is my Kansas City BBQ Sauce! It adds smokiness as well as sweetness to the mixture. Can you use another barbecue sauce instead? Pork Chops with Pineapple BBQ Sauce

This Pork Chops with Pineapple BBQ Sauce recipe is loaded with flavor! It's an unpretentious meal to enjoy with your family!

Ingredients
  

  • 4 large bone-in pork chops, patted dry
  • ground Himalayan pink salt, to taste
  • freshly ground black pepper, or to taste (I always use mixed peppercorns)
  • 2 tbsp. canola oil tips & tricks
  • 1/2 cup white onions, diced
  • 1/2 cup red peppers, diced
  • 2 tbsp. jalapeño peppers, seeded and finely diced
  • 1 1/2 cups pineapple, cored and diced
  • 2 tbsp. ginger, minced
  • 2 large cloves garlic, pressed
  • 3/4 cup pineapple juice
  • 1/4 cup Kansas City BBQ Sauce see Recipe
  • 1 tbsp. brown sugar
  • 1 tsp. ground cumin
  • 1 tbsp. cornstarch (mixed in 1/2 cup cold water)

Directions
 

  • Generously season pork chops on both sides with salt and pepper; set aside.
  • In a large skillet over medium heat, add oil and when hot, place chops. Cook them until brown, about 2:30 to 3 minutes per side depending on the thickness.
  • Transfer them to a plate while continuing with the recipe.
  • In the same skillet, add onions and quickly sauté for 1 minute. Add red and jalapeños peppers, and cook for 1 minute.
  • Add pineapple and sauté for 2 minutes before adding ginger and garlic; sauté 1 minute.
  • Pour in pineapple juice and Kansas BBQ sauce. Stir well, bring the mixture to a gentle simmer; add brown sugar and ground cumin.
  • Return pork chops including any accumulated juices back to the skillet, spoon sauce over the meat, cover, and simmer for 5 minutes.
  • Flip the chops and spoon sauce over; cover and cook for an additional 5 minutes.
  • When time is up, transfer the meat onto a plate and add cornstarch mixture. Stir well until the sauce thickens, about 30 to 40 seconds. Serve immediately.
