Pineapple Teriyaki Chicken
A common remark that I often get from people is “how lucky David is!”. As I continuously cook 👩🍳 all these delicious recipes so I can share them with you, of course, someone has to eat them! Like anyone else, I need a break by making something super simple and thank goodness, I have a few to rely on…
Ask any blogger out there and they will tell you that at one point, they need to recuperate by making something relatively fast and easy ⏳. I have many of those like Hamburger Helper, Orzo with Chicken & Asiago, Cola Chicken, Easy Miso Glazed Salmon, Creole Couscous with Andouille & Shrimp, Lamb Keema, etc.
Another one that is incredibly easy to make is my Pineapple Teriyaki Chicken! With a lovely exotic flavor, this one pot dish is so tasty 😋! It’s quite fast to make and a nice meal to enjoy on weeknights as well as on weekends.
For the making of this recipe, I rely on my Hawaiian Style Teriyaki Sauce. There are two ingredients that don’t go in the sauce which are ginger and garlic 🧄 because they’re used in the main dish. Also, another point I would like to mention is contrary to wings where the sauce has to be reduced considerably, for this application, we don’t reduce the sauce at all. We simply keep it warm until needed.
I like making this Pineapple Teriyaki Chicken because it’s pretty straightforward; toss the veggies, cook the chicken, add the pineapple 🍍, pour the sauce over, and done! Also, it’s a one-pot recipe making clean up a breeze… that’s another bonus! I like serving it with rice but choose what you like to serve it with.

Pineapple Teriyaki Chicken

Ingredients
- 2 tbsp. canola oil, divided tips & tricks
- 2 cups white onions, cubed
- 3/4 cup red peppers, cubed
- 3/4 cup green peppers, cubed
- 2 large chicken breasts, cut into bite-size pieces
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 1 1/2 tbsp. ginger, minced
- 2 large cloves garlic, pressed
- 2 cups pineapple, cubed
- 1 teriyaki sauce recipe, warmed see Recipe
- 1 tbsp. cornstarch (mixed with 1/2 cup cold water)
- 1 tbsp. sesame seeds, for garnish
- 2 large green onions, for garnish
Directions
- In a large skillet or wok over medium-high heat, add 1 tbsp. oil and when it gets hot, add white onions; sauté for 2 minutes.
- Add red and green peppers; sauté for 3 to 4 minutes.
- Scoop up the mixture to a bowl and set aside.
- Add remaining tbsp. oil and when shimmering, add chicken cubes; season with freshly ground black pepper. Cook the cubes halfway before adding ginger and garlic; toss the ingredients until chicken is no longer pink.
- Stir in pineapple cubes, cover, reduce the heat to medium and cook for 8 minutes, stirring occasionally.
- Pour in the warm teriyaki sauce, stir well and bring the mixture to a boil.
- Add cornstarch mixture and stir until the sauce thickens, 45 seconds.
- Return the vegetables, stir well and simmer for 2 minutes. Serve with rice and garnish with sesame seeds and chopped green onions.
