Duck Fat Roasted Potatoes
Side dishes are a great accompaniment for proteins. They can be Rice, Bread, Salad, Vegetables or even Pasta.
When it comes to vegetables, one of the most popular ones here in North American are potatoes. They can be Mashed, boiled, Baked, Fried, sautéed or Barbecued.
There’s a dish that I simply have to make when there’s some duck fat around… my Duck Fat Roasted Potatoes! Oh my, oh my! These potatoes are absolutely incredible! They are rich in flavor and an awesome side dish to serve along with Ham, Roast Beef or Pork, Grilled Chicken, etc.
What makes these potatoes so delicious is obviously the duck fat. When I cook Duck Breasts, I collect the fat from the pan. It would be a “sin” to throw it away because it’s loaded with flavor. Nowadays, duck fat can also be purchased at some grocery or specialty stores.
Besides using it for Duck Fat Roasted Potatoes, it can be utilized in other recipes. Combined with other fats, duck fat is awesome when frying food like Potato Latkes. Last week in my kitchen tips & tricks, I showed you how I do my Oven Baked Chicken. Instead of oil, add duck fat for extra flavor or use it to sauté ingredients or vegetables like Mushrooms, Broccolini, etc. When cooking a filet mignon in a cast iron pan, baste the meat with duck fat instead of butter or replace oil with it when making your Mayo or salad dressing, even in baking. As you can see, the use of it is almost unlimited!
As much as I use it for other recipes, this Duck Fat Roasted Potatoes dish is amazing! The potatoes are crispy with an incredible savory flavor. It is a succulent way to bring your roasted potatoes up a few notches… trust me on that! Now, if you want to enhance this dish even more, sprinkle some Za’atar Spice Blend on top, it’s incredible!

Duck Fat Roasted Potatoes

Ingredients
- 3 lbs. Yukon Gold potatoes, washed, scrubbed and quartered
- 1 tsp. coarse sea salt
- 1/2 cup rendered duck fat Footnote
- 1/2 tbsp. dried rosemary
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 1/4 tsp. ground Himalayan sea salt, or more to taste
- 1/2 tsp. mild paprika, or more to taste
- za'atar spice blend, to taste tips & tricks
Directions
- Preheat oven to 400ºF and line a baking dish with foil; set aside.
- Place the potatoes in a large pot, filled with enough cold water so the level is about 1-inch above them; add coarse sea salt.
- Transfer to the stove on high heat, cover and bring to a boil. When it boils, remove the lid and set the timer for 5 minutes.
- Meanwhile, in a medium pot over medium-low heat, add duck fat and rosemary. Heat it up, stir and keep warm until needed.
- Drain the potatoes in a colander before transferring them to a cutting board. Cut the potatoes into smaller pieces – not too small otherwise they won’t hold their shape.
- Place them in the prepared baking dish and pour on warm fat. Stir to coat and season the potatoes with freshly ground black pepper, sea salt and paprika.
- Transfer to the preheated oven and cook for 45 minutes.
- After 15 minutes, remove from the heat and flip them over; return to the oven for another 15 minutes.
- Remove from the oven, flip them again and roast for the remaining 15 minutes.
- Remove from the heat, flip once again and set the oven to broil (leave the rack in the middle). Roast them for 5 minutes .
- Remove from the oven and let rest for a few minutes before serving. If you want to enhance this dish even more, sprinkle on some Za'atar Spice Blend on top.
