Brussels Sprouts with Bacon and Onions
I love vegetables and depending on the season, I take advantage of what Mother Nature has to offer. By late fall and through the winter, there is a vegetable that David and I really enjoy and it’s Brussels Sprouts! During the Holidays, it’s something I like serving with my Turkey Dinner.
There are a few different ways to serve these little guys; steamed, sautéed or cooked. Some home cooks like to grate them raw and add them to a salad. This is definitely on my list to try but in the meantime, I enjoy my recipe of Brussels Sprouts with Bacon and Onions! As Brussels sprouts are now available at your supermarket, you can buy them either loose or on a stalk. I prefer buying them on a stalk for a couple of reasons. First, I know they are fresh and second, I get more for my money. The stalk can look intimidating but don’t worry because it’s quite easy to handle. This Brussels sprouts with Bacon and Onions recipe is a great side dish to serve with most proteins. As the Holidays are approaching, this dish will be served along with my turkey dinner but I also enjoy accompanying it with my Salisbury Steak, Mediterranean Leg of Lamb as well as with some Grilled Chicken Breasts.
If some of you or other family members are not too fond of these little green vegetables, this Brussels Sprouts with Bacon and Onions recipe is a good way to give them a second chance. You’ll be surprised how amazingly delicious these healthy vegetables can be!

Brussels Sprouts with Bacon and Onion

Ingredients
- 4 cups Brussels sprouts, trimmed and halved tips & tricks
- 2 tbsp. olive oil, or as needed tips & tricks
- ground Himalayan sea salt, to taste
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 4 large slices bacon, cut into small pieces
- 3/4 cup red onions, Lyonnaise cut and halved tips & tricks
- 1 tbsp. brown sugar such as demerara, or to taste
- 2 tbsp. freshly squeezed lemon juice tips & tricks
Directions
- Preheat oven to 400ºF
- Line a baking dish with foil before spreading the sprouts in a single layer. Drizzle on oil, enough to coat them and season with salt and freshly ground black pepper.
- Transfer to the preheated oven and cook for 25 minutes, tossing them a couple times, until golden brown.
- Meanwhile, in a large skillet over medium heat, cook bacon until crisp, about 8 minutes. Remove and place bacon on a plate lined with paper towel.
- Add onions to the drippings (if there’s not enough, add clarified butter or vegetable oil) and sauté until soft, about 5 minutes. Stir in brown sugar.
- Add the roasted sprouts and bacon to the skillet; pour in lemon juice. Stir once again until the ingredients are well mixed and transfer to a serving dish.
