Creamy Mushroom Chicken
In my book, December is officially the craziest month of the year! We try to get everything done on time. There’s a lot of baking to do, an endless shopping list 📑 to look after, parties to attend, decorations to put up, clean and organize our house, etc.
With all the things we have to do before Christmas morning, it doesn’t give us much time to relax. The first thing that goes out the window is cooking. Most will do take-out 🥡, grab some processed food at the grocery store or simply go out for dinner.
Hey, I totally got it! On the other hand, I’m sure throughout that nonsense, there’s still 30 minutes ⏰ you can try to squeeze in to make a nice meal for you and your family without compromising on the flavor! Here’s one that I like making and it’s my Creamy Mushroom Chicken!
Incredibly satisfying, this simple and yet delicious dish is one of my go-to recipes! Either I feel lazy 😕 (yes, it happens once in a while) or when time is in short supply, this Creamy Mushroom Chicken is my savior! It’s a great weeknight meal to add to your folder…
I’m pretty fast when chopping 🔪 or prepping so I can have everything ready in less than 10 minutes. When it comes to cooking, it takes only 20 minutes… that’s pretty fast! Depending how I feel and what I have left in the fridge, I either serve the mixture over rice, pasta or mashed potatoes.
Like most recipes, you can adapt it to your liking. If there’s some spinach in the crisper, I add it to the mixture at the end. I use button mushrooms 🍄 but any other kinds are fine. Chicken can be replaced with pork. If you want, use ground beef instead – in that case, you’ll have to modify the directions.
This is just an ordinary recipe and it won’t win any prizes BUT it sure is a nice comfort food! While our schedule is upside down as we try getting ready for the Holidays 🎄, this Creamy Mushroom Chicken is an incredibly recipe to have on hand and perfect for those chaotic times.

Creamy Mushroom Chicken

Ingredients
- 2 tbsp. butter, divided
- 1 1/2 tbsp. olive oil, divided tips & tricks
- 2 large (about 2 lbs.) chicken breasts, cubed
- ground Himalayan pink salt, to taste and divided
- freshly ground black pepper, to taste and divided (I always use mixed peppercorns)
- 1 cup white onions, diced
- 3 1/2 cups (about 1/2 lb.) button mushrooms, washed and sliced
- 3 large cloves garlic, pressed
- 1 can (284 ml/10 oz.) cream of mushroom
- 10 oz. (284 ml.) milk
- 1 cup frozen peas
- 1 tsp. hot paprika
- 1 tbsp. Herbes de Provence see Recipe
- 1/4 cup Grana Padano cheese, grated optional
- 1 tbsp. chopped parsley, for garnish tips & tricks
Directions
- In a large skillet over medium heat, add 1 tbsp. butter and 1 tbsp. oil.
- When hot and starts sizzling, add chicken cubes; season with salt and pepper. Sauté until just no longer pink, about 4 minutes.
- Using a slotted spoon, transfer the meat to a bowl and set aside.
- Add onions and season with ground sea salt; sauté for 2 minutes.
- Add mushrooms, 1 tbsp. butter and ½ tbsp. oil; season with freshly ground black pepper. Toss to coat in fat and sauté for 2 minutes.
- Add pressed garlic and sauté for 1 minute. Add can of cream of mushroom and milk. Increase to medium-high heat and stir until the mixture is smooth.
- Add frozen peas and hot paprika; stir well. When the mixture returns to a simmer, set the timer for 2 minutes.
- Return the chicken cubes including any accumulated juices and add Herbes de Provence. Stir, bring it back to a simmer and cook for 5 minutes. If desired, add cheese.
- Spoon mixture over pasta, rice or mashed potatoes, and garnish with fresh chopped parsley.
