Turkey à la King on Toast

- 1 tbsp. butter tips & tricks
- 1/4 cup green onions, finely chopped
- 1/4 cup red peppers, finely chopped
- 1 1/2 cups béchamel sauce see Recipe
- 1 1/2 cup cooked turkey meat, cubed (substitute chicken) see Recipe
- 1 cup frozen peas
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- ground Himalayan sea salt, to taste
- 4 slices bread, hamburger buns OR English muffins see Recipe
- 2 large free-run eggs, hard boiled and sliced
In a large skillet over medium heat, add butter. When it starts sizzling, add green onions and red peppers; sauté until soft, about 2 minutes.
Add béchamel sauce and stir well. Add turkey and frozen peas; season with ground black pepper and salt. Cook for 10 minutes or until heated through. Meantime, toast the bread or buns. Place 2 slices of bread per plate and two slices of hard boiled eggs.
Generously spoon the béchamel mixture on top with more sliced boiled eggs; serve immediately.
