Ingredients

  • 1 tbsp. butter
  • 1/4 cup green onions, finely chopped
  • 1/4 cup red peppers, finely chopped
  • 1 1/2 cups béchamel sauce see Recipe
  • 1 1/2 cup cooked turkey meat, cubed (substitute chicken) see Recipe
  • 1 cup frozen peas
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • ground Himalayan pink salt, to taste
  • 4 slices bread, hamburger buns OR English muffins Footnote
  • 2 large free-run eggs, hard boiled and sliced

Directions

  • In a large skillet over medium heat, add butter. When it starts sizzling, add green onions and red peppers; sauté until soft, about 2 minutes.
  • Add béchamel sauce and stir well. Add turkey and frozen peas; season with ground black pepper and salt. Cook for 10 minutes or until heated through.
  • Meantime, toast the bread, buns or English muffins.
  • Place 2 slices of bread per plate and two slices of hard boiled eggs.
  • Generously spoon the béchamel mixture on top with more sliced boiled eggs; serve immediately.
