- 3 lbs. Yukon gold potatoes, peeled and cut into 1 1/2-inch cubes
- 1 tbsp. coarse sea salt
- 4 tbsp. butter
- 1/4 cup light sour cream
- 1/4 cup milk, warmed
- 3 tbsp. prepared horseradish, or more to taste see Recipe
- 1/2 tsp. garlic salt, or more to taste
- freshly ground mixed peppercorns, to taste
- 2 tbsp. fresh chives, finely chopped tips & tricks
In a large pot, add coarse sea salt, potatoes and top with cold water. Bring to a boil and cook until tender, about 15 minutes.
Drain well and return the potatoes to the pot. Mash the spuds before adding butter; mash again.
Add sour cream and warm milk. Mash to combine before adding horseradish; mash to blend. Season with garlic salt and freshly ground mixed peppercorns; add chives. Mix one more time, making sure there’s no lumps; taste and adjust if needed.
