- 1 1/2 lbs. (750 g) lean ground beef
- ground Himalayan pink salt, to taste and divided
- freshly ground black pepper, to taste and divided (I always use mixed peppercorns)
- 1/2 cup red onions, finely chopped
- 2 large cloves garlic, pressed
- 2 tbsp. ketchup
- 1 tbsp. tomato paste tips & tricks
- 1 tbsp. prepared mustard
- 1/2 tbsp. hot sauce, such as Cholula®
- 1/2 tbsp. Old El Paso Taco seasoning see Recipe
- 2 cups uncooked elbow macaroni
- 3 cups low-sodium beef broth
- 1 cup light sour cream
- 2 cups sharp Cheddar cheese, grated
- 1 tbsp. fresh parsley, chopped tips & tricks
In a large skillet over medium-high heat, add beef and break it down into small pieces; season with salt and pepper.
When halfway cooked, add onions and continue cooking until the meat is no longer pink and the onions are softened, about 2 ½ to 3 minutes.
Add garlic and sauté for 1 minute.
Add ketchup, tomato paste, mustard, hot sauce, taco seasoning, and re-season with salt and freshly ground black pepper; stir well. Add the macaroni and pour in the broth; stir well. Bring to a boil then reduce to medium-low, cover and simmer for 15 minutes or until the macaroni is cooked through.
Add sour cream and stir well.
Add cheese and stir until melted. Sprinkle on some chopped parsley and serve immediately.
