Ingredients

  • 1 lb. manila clams, cleaned and scrubbed
  • 1 tbsp. butter
  • 1 tbsp. olive oil tips & tricks
  • 1/4 cup shallots, finely chopped
  • 1/4 cup red peppers, finely chopped
  • 1 large clove garlic, pressed or chopped
  • freshly ground mixed peppercorns, to taste
  • 1/4 tsp. dried tarragon
  • 1/8 tsp. red pepper flakes, or to taste
  • 1/2 cup dry white wine
  • 1/2 tbsp. freshly squeezed lemon juice tips & tricks
  • 1/2 tbsp. fresh chopped parsley tips & tricks
  • 4 lemon wedges, for serving

Directions

  • In a large pot over medium heat, add butter and oil. When hot, add shallots and red peppers; sauté for 1 minute.
  • Add garlic, tarragon and pepper flakes; sauté for 1 minute.
  • Pour in white wine and bring to a simmer before adding prepared clams. Stir well, cover and steam for 5 to 7 minutes or until fully opened.
  • Pour in lemon juice and add parsley; stir well.
  • Discard unopened clams. Serve immediately with crusty or garlic bread.
