manila clams, cleaned and scrubbed

butter

shallots, finely chopped

red peppers, finely chopped

clove garlic, pressed or chopped
freshly ground mixed peppercorns, to taste

tsp.
dried tarragon

tsp.
red pepper flakes, or to taste

cup
dry white wine
1/2
tbsp.
freshly squeezed lemon juice

Directions
In a large pot over medium heat, add butter and
oil
. When hot, add shallots and red peppers; sauté for 1 minute.
Add garlic, tarragon and pepper flakes; sauté for 1 minute.
Pour in white wine and bring to a simmer before adding prepared clams. Stir well, cover and steam for 5 to 7 minutes or until fully opened.
Pour in
lemon juice
and add
parsley
; stir well.
Discard unopened clams. Serve immediately with
crusty
or garlic bread.
