Fluffy Blueberry Pancakes

- 1/2 cup blueberries, washed
- 1/4 tsp. lemon zest
- 2 tsp. clarified butter tips & tricks
In a mixing bowl, add blueberries and lemon zest to the pancake mix batter. Stir to combine and let it rest at room temperature for 15 minutes.
On medium-high heat, warm up either a skillet, griddle, or crêpe maker. When hot, add butter and spread it out evenly (work in batches if your cooking vessel is not big enough).
Ladle on about ¼ cup batter trying to gently spread out the blueberries. Cook the pancakes for 2 ½ to 3 minutes per side or until brown. Serve them immediately with butter and maple syrup.
