Beer Can Chicken

Ingredients

  • 1 whole chicken (4 to 5 lbs.), rinsed and patted dry
  • 2 1/2 tbsp. canola oil tips & tricks
  • 2 1/2 tbsp. Chicken Spice Mix see Recipe
  • 1 tsp. brown sugar
  • 1 can (12 oz/355 ml) of your favorite beer Footnote
  • 2 large basil leaves tips & tricks
  • 3 sprigs thyme
  • 1 large clove garlic, peeled and quartered
  • 1 cup BBQ Sauce for Chicken see Recipe

Directions

  • Preheat grill between 375ºF to 400ºF.
  • In a bowl, add oil, Chicken Spice Mix and brown sugar; set aside.
  • Pour beer into canister and add basil leaves, thyme sprigs, and garlic clove. Place the lid on, secure it and slide it into the stand sitting on the tray.
  • Sit chicken on top of canister and move its legs forward to stabilize the bird. Evenly brush on the rub, making sure to cover the entire chicken.
  • Place the tray in the middle of the preheated grill with indirect heat, close the lid and cook until internal temperature reaches 175ºF.
  • About 45 minutes after sitting there (literally), brush on BBQ Sauce for Chicken, close the lid and repeat every 15 minutes until it’s done.

Notes

Footnote: Someone will have to sacrifice themselves and drink 1/3 of the beer before adding garlic and fresh herbs to it.
