Ingredients

  • 1 1/2 lbs. (750 g) lean ground beef
  • 3 slices bacon, cooked and chopped tips & tricks
  • 1/2 cup Roquefort blue cheese, crumbled and more for garnish tips & tricks
  • 1/4 cup red onions, finely chopped
  • 1 tbsp. chipotle purée tips & tricks
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 4 large hamburger buns see Recipe

Directions

  • In a large bowl, add ground beef, bacon, cheese, onions, chipotle purée and freshly ground black pepper. Mix the ingredients until well blended.
  • Divide the beef mixture into 4 sections and form 4 patties. Press in the center of each patty, making a dent, and transfer to a plate. Cover with plastic wrap and transfer to the refrigerator for 2 hours.
  • Preheat the barbecue to 500ºF.
  • Place patties on the hot grill, close the lid and cook for about 7 minutes per side or until the internal temperature reads 160ºF.
  • A couple minutes before the patties are done cooking, place the hamburger buns on the highest grill and lightly toast.
  • When serving, place more blue cheese on top of the patty.
