Ingredients

  • 1 1/2 lbs. (750 g) lean ground beef
  • ground Himalayan sea salt, to taste and divided
  • freshly ground black pepper, to taste and divided (I always use mixed peppercorns)
  • 1/2 cup red onions, finely chopped
  • 2 large cloves garlic, pressed
  • 2 tbsp. ketchup
  • 1 tbsp. tomato paste tips & tricks
  • 1 tbsp. prepared mustard
  • 1/2 tbsp. hot sauce, such as Cholula®
  • 1/2 tbsp. taco seasoning see Recipe
  • 2 cups uncooked elbow macaroni
  • 3 cups low-sodium beef broth
  • 1 cup light sour cream
  • 2 cups sharp Cheddar cheese, grated
  • 1 tbsp. fresh parsley, chopped tips & tricks

Directions

  • In a large skillet over medium-high heat, add beef and break it down into small pieces; season with salt and pepper. When halfway cooked, add onions and continue cooking until the meat is no longer pink and the onions are softened, about 2 ½ to 3 minutes. Add garlic and sauté for 1 minute.
  • Add ketchup, tomato paste, mustard, hot sauce, taco seasoning, and re-season with salt and freshly ground black pepper; stir well. Add the macaroni and pour in the broth; stir well. Bring to a boil then reduce to medium-low, cover and simmer for 15 minutes or until the macaroni is cooked through.
  • Add sour cream and stir well. Add cheese and stir until melted. Sprinkle on some chopped parsley and serve immediately.
