- 1 tbsp. butter
- 1/4 cup shallots, finely diced
- 1 can (19 oz./540 ml) navy beans, drained and rinsed
- 1/3 cup low-sodium chicken broth (substitute vegetable broth)
- 1/2 tbsp. freshly squeezed lemon juice tips & tricks
- 1/4 tsp. hot paprika
- 1/8 tsp. ground Himalayan pink salt, or to taste
- 1/8 tsp. freshly ground black pepper, or to taste (I always use mixed peppercorns)
- 1/2 tbsp. extra-virgin olive oil tips & tricks
In a saucepan over medium heat, melt butter and when sizzling, add shallots; sauté until translucent, about 1 ½ to 2 minutes.
Add beans and broth; bring to a boil.
As soon as it starts boiling, remove from the heat and pour the mixture into the jar of a blender.
Add lemon juice, paprika, salt and pepper. Process until somewhat smooth before slowly pouring in oil through the feeder.
