- 4 cups seedless watermelon, cut in pieces plus two wedges for garnish
- 8 large mint leaves, plus more for garnish tips & tricks
- 4 tbsp. simple syrup tips & tricks
- 2 tbsp. freshly squeezed lime juice tips & tricks
- 10 large ice cubes, divided
- 4 ounces white rum
- 2 lime wheels, for garnish
In the jar of a blender, add watermelon and process until liquified.
Strain the fruit through a fine sieve sitting over a large measuring cup. Pour the collected liquid into a pitcher and set aside.
In the glass of a Boston shaker, add mint leaves, simple syrup and lime juice. Using a muddler, lightly crush the ingredients. Place the metal tumbler on top, tap down to secure, and shake vigorously for 20 seconds.
Place strainer on top and pour the mixture into the pitcher. Add white rum and stir well.
Pour the mix into two rock glasses or stemless wine glasses over 3 ice cubes. Garnish with a watermelon wedge, lime wheel and mint sprig.
