SWEET & SOUR SAUCE
- 1/4 cup ketchup
- 1 tbsp. hoisin sauce
- 1 tbsp. fresh ginger, minced
- 2 large cloves garlic, pressed
- 2 tbsp. brown sugar, such as demerara
- 2 tbsp. apple cider vinegar
- 2 tbsp. sweet chili sauce see Recipe
- 1 tbsp. chili sauce, such as Heinz®
- 1/2 tbsp. Worcestershire sauce
- 1 cup unsweetened pineapple juice
- 1 tbsp. cornstarch mixed with 1/3 cup cold water
STIR FRY
- 1 lb. pork, cut into 1-inch pieces
- 1/8 tsp. ground Himalayan pink salt
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 1 tbsp. cornstarch
- 1 tbsp. olive oil tips & tricks
- 1/2 large white onion, cut into 1-inch pieces
- 1 large carrot, peeled and sliced
- 1 tbsp. sesame oil
- 1/2 large red pepper, cut into 1-inch pieces
- 1/2 large yellow pepper, cut into 1-inch pieces
- 1/2 large poblano pepper, cut into 1-inch pieces
- 1 large celery rib, cut into 1-inch pieces tips & tricks
- 1 small clove garlic, pressed
- 1 tsp. fresh ginger, minced
- 2 cups pineapple chunks
- 1/2 cup peanuts, unsalted (substitute cashews)
- 1 large green onion, cut into 1/2-inch pieces diagonally, for garnish
- sesame seeds, for garnish
SWEET & SOUR SAUCE
In a medium saucepan, combine all the sauce ingredients except the cornstarch; mix well.
Bring to a boil and then add cornstarch mixture; stir until the sauce thickens, about 30 to 45 seconds. Reduce the heat to low and keep it warm.
STIR FRY
In a large bowl, place pork and season with salt and pepper. Dredge with cornstarch using a fine sieve; set aside.
In a wok over medium-high heat, add olive oil. When it gets hot, add pork and sauté until half cooked. Add onions and sauté for 2 minutes. Add red, yellow and poblano peppers; sauté for another 2 minutes.
Add carrots and sauté for 2 minutes. Add celery and cook as well for 2 minutes. Add garlic and ginger; sauté for only 1 minute. Add pineapple chunks and sauté for 2 minutes. Add peanuts and sauté for 2 minutes.
Pour sweet & sour sauce over the pork mixture and reduce the heat to medium-low. Let it simmer for 4 to 5 minutes.
Serve over cooked rice and garnish with green onions & sesame seeds
