PORK LOIN CHOPS
- 2 large (10 oz. each) boneless pork loin chops, patted dry
- freshly ground mixed peppercorns, to taste and divided
- 1 tbsp. canola oil tips & tricks
- 2 chopped green onions (green parts only), for garnish
- 2 tsp. toasted sesame seeds, for garnish tips & tricks
SAUCE
- 2 tbsp. fresh ginger, minced
- 4 large cloves garlic, pressed
- 1/4 cup Sweet Chili Sauce see Recipe
- 2 tbsp. low-sodium soy sauce
- 1 tbsp. brown sugar
- 1 tbsp. ponzu sauce
In a bowl, combine all the sauce ingredients. Whisk well and set aside.
Season meat with freshly ground mixed peppercorns; set aside.
In a skillet over medium-high heat, add oil. When hot, add pork loin chops, seasoned side down; season the tops with mixed peppercorns. Sear for 3 minutes before flipping and cook for another 3 minutes. Flip them on their sides, and sear until brown. Transfer to a plate and set aside.
In the same skillet, add sauce and reduce heat to medium-low. Cook until it thickens, 2 minutes at the most.
Return pork, including any accumulated juices, to the skillet. Spoon sauce over and cook for 1 minute, before flipping and basting meat with sauce.
Flip and cover with sauce a few times or until they reach the internal temperature between 140ºF to 145ºF.
Remove from the heat and let the chops rest for 5 minutes before serving. Sprinkle on toasted sesame seeds and green onions.
