Shrimp Sliders

SLIDERS
- 1 lb. shrimp, peeled, deveined, quartered and divided
- 4 tbsp. red peppers, roughly chopped and divided
- 4 tbsp. green onions, roughly chopped and divided
- 1 tbsp. freshly squeezed lemon juice tips & tricks
- 1 tsp. Old Bay seasoning
- 1/2 tsp. mild paprika
- 1/2 tsp. lemon zest
- 1/2 tsp. ground Himalayan sea salt, or to taste
- 1/4 tsp. freshly ground black pepper, or to taste (I always use mixed peppercorns)
- 1 large clove garlic, halved
- 1 tbsp. fresh dill, chopped tips & tricks
- 3/4 cup Panko breadcrumbs
- 1 tbsp. canola oil, or as needed plus more for hands tips & tricks
- lettuce and tomatoes, for garnish
MAYO SAUCE
- 1/2 cup mayo see Recipe
- 1 tsp. sriracha sauce, or to taste
In the bowl of a food processor, add ½ lb. shrimp, 2 tbsp. red peppers, 2 tbsp. green onions, lemon juice, Old Bay seasoning, paprika, lemon zest, salt, pepper and garlic. Process until the ingredients are finely chopped and the mixture turns into a thick paste, about 30 seconds, cleaning the sides of the bowl.
Transfer the mixture to a medium bowl and add the remaining ½ lb. shrimp, the remaining 2 tablespoons red peppers as well as green onions, dill, and ¼ cup of panko breadcrumbs. Combine all the ingredients until nicely blended before adding another ¼ cup of breadcrumbs, mix again and add the last ¼ cup.
With greased hands, scoop about 2 ½ tablespoons and form a patty. Place on a baking sheet lined with a silicone mat while making the others.
Cover with plastic wrap and transfer to the fridge for at least 30 minutes but ideally, 2 hours is better.
Meanwhile, mix the sauce ingredients, cover and chill until ready to serve.
In a large skillet over medium-high heat, add 1 tablespoon of canola oil and when it’s hot, add the shrimp patties. Grill for 5 minutes before flipping them and grilling the other side until nicely browned, about 3 to 4 minutes.
Spread mayo sauce on the top and bottom buns, place lettuce then the patties on top followed by tomato slices. Makes 9 sliders.
