Ingredients
BÉCHAMEL SAUCE (adapted for this recipe)
3tbsp.butter
3tbsp.unbleached all-purpose flour
1 1/2cupsmilk, room temperature
freshly ground black pepper, to taste (I always use mixed peppercorns)
1tbsp.fresh chopped dilltips & tricks
PIZZA
214-inch pizza doughsFootnote
1cupred onions, diced
1/2cupgreen peppers, diced
1/2cupred peppers, diced
3cupsMozarrella cheese, grated and dividedtips & tricks
lemon zest, to taste
1/2tsp.hot or smoked paprika
1tbsp.finely chopped parsley, for garnishtips & tricks
SHRIMP MIXTURE
1tbsp.butter
1/2tbsp.olive oiltips & tricks
1lb.large shrimp or prawns, peeled, deveined, patted dry and halved
2largecloves garlic, pressed
1tbsp.freshly squeezed lemon juicetips & tricks
Directions
BÉCHAMEL SAUCE
In a saucepan over medium heat, add butter. When melted, add flour and whisk constantly for 5 minutes.
Whisk in milk; season with pepper and dill. Whisk constantly until the sauce thickens, about 10 minutes.
Remove from the heat to allow to cool.
PIZZA
Preheat oven to 500ºF.
Evenly spread the béchamel sauce on pizza doughs, leaving about 1-inch from the edge.
Add red onions and peppers. Divide 1 cup of Mozzarella cheese between the two pies.
Transfer to the preheated oven and bake for 8 minutes. Meanwhile make the shrimp mixture…
Remove pizza from the oven and evenly place shrimp on top; grate lemon zest over.
Divide the remaining 2 cups of cheese between pies and sprinkle on paprika.
Transfer to the 500ºF preheated oven and bake for 5 minutes or until the cheese is melted.
Remove from the heat and let it rest for 5 minutes before garnishing with fresh chopped parsley.
SHRIMP MIXTURE
In a skillet over medium heat, add butter and oil. When it starts sizzling, add shrimp, garlic and lemon juice. Quickly sauté the ingredients for only 1 minute.
Remove from the heat and transfer the mixture to a bowl; set aside.
