- 1 ½ cups pineapple juice
- ½ cup hoisin sauce
- ⅓ cup sweet chili sauce see Recipe
- 5 tbsp. brown sugar, packed
- 2 tbsp. low-sodium soy sauce
- 1 ½ tbsp. ginger, minced
- 2 large cloves garlic, pressed
- 1 tsp. smoked paprika
- cornstarch slurry (½ tbsp. cornstarch mixed with ¼ cup cold water)
In a saucepan over medium-high heat, combine all the ingredients, and stir until well blended.
Bring the mixture to a boil, reduce to medium-low, and let it simmer for 20 minutes, or until the sauce reduces by 1/3, stirring often.
Turn the heat to high and bring it to a boil. Add cornstarch slurry, and stir until the sauce thickens, about 60 seconds.
Remove the saucepan from the heat and bring the sauce to room temperature before storing it in airtight container. Transfer to the fridge until needed. Yields a generous 2 cups.
