- 1 lb. lobster meat, cooked and cut into 1-inch pieces tips & tricks
- 3 tbsp. mayonnaise see Recipe
- 1 tbsp. Miracle Whip
- 1 tbsp. chives, thinly sliced tips & tricks
- 1/3 cup celery, finely diced tips & tricks
- 1 tsp. fresh tarragon leaves, chopped
- ground Himalayan pink salt, to taste
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 1 tbsp. freshly squeezed lemon juice optional
- 6 to 8 New England hot dog buns
- 3 tbsp. butter, softened or as needed
- 6 lemon wedges, for garnish
- potato chips
In a bowl, combine lobster meat, mayo, Miracle Whip, chives, celery, tarragon, salt, pepper, and lemon juice. Stir well and set aside.
Spread a thin layer of butter on both sides of buns and place them in a skillet over medium heat. When nicely browned, flip to grill the other side.
Generously spoon lobster meat into each bun and serve immediately with potato chips.
