mild Italian sausages, casings removed

Directions
In a large bowl, combine all the ingredients, mixing them by hand.
Place a plastic wrap on top, making sure it touches the surface, and transfer to the fridge for at least 1 hour.
Preheat oven to 425ºF and line a baking sheet with a lightly greased foil.
When ready, wet hands and, using a small scoop, form the mixture into balls. Place them on the prepared baking sheet.
Transfer to the preheated oven and bake for 18 minutes or until internal temperature reaches 160ºF.
Turn the heat on broil and cook for 2 minutes or until nicely brown.
Remove from the heat, and place meatballs on a plate or baking sheet lined with paper towel to remove excess fat.
Transfer them to a serving plate along with your favorite dipping sauce. Makes 40 meatballs.

For this application, the measurements are...
- 1 1/2 cups flour
- 2 1/4 tsp. baking powder
- 1/2 tsp. fine salt (substitute ground sea salt)
