- 1 12-inch Foolproof Cauliflower Pizza Dough, baked see Recipe
- 1/4 cup Greek pesto sauce see Recipe
- 1 large chicken breast (about 1 cup), poached and cubed tips & tricks
- 1 can (6 oz.) artichoke hearts, rinsed, drained and cubed
- 2 tbsp. sun-dried tomatoes, well drained
- 2 tbsp. shallots, thinly sliced (Lyonnaise cut) tips & tricks
- 1/8 tsp. red pepper flakes, or to taste
- 2 cups sharp white Cheddar cheese, grated
- 1/2 tbsp. chopped parsley, for garnish tips & tricks
Preheat oven to 425ºF.
Spread pesto, leaving about ¼-inch from the edge of the pizza crust. Evenly add chicken cubes, artichoke hearts, sun-dried tomatoes, shallots, red pepper flakes, and cheese.
Transfer to the preheated oven and bake for 10 to 12 minutes or until the cheese is melted.
Remove from the heat and let it rest for 5 minutes before adding chopped parsley.
