Meatless Spaghetti Sauce

- 1 1/2 tbsp. olive oil tips & tricks
- 1 cup white onions, finely chopped
- 1 cup red peppers, finely chopped
- 1 tsp. ground Himalayan pink salt, or to taste and divided
- 3 large cloves garlic, pressed
- 4 cups tomato sauce such as marinara see Recipe
- 1 tbsp. tomato paste tips & tricks
- 1 tbsp. brown sugar, such as demerara
- 1/4 cup dry red wine
- 1/2 tsp. red pepper flakes, or to taste
- 1 tbsp. Italian seasoning see Recipe
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 2 tbsp. fresh chopped parsley tips & tricks
In a large pot over medium, heat oil before adding white onions and red peppers; season with salt. Sauté the vegetables for 3 to 4 minutes.
Add pressed garlic and sauté it for only 1 minute.
Add the remaining ingredients, stir well and bring the mixture to a simmer.
Reduce the heat to medium-low and let it simmer for 1 hour, stirring occasionally. To prevent the tomato sauce from splashing everywhere, place the lid slightly ajar.
