- 2 1/2 cups dried medium shell pasta
- 1 tbsp. olive oil tips & tricks
- 1 tbsp. butter
- 2 tbsp. shallots, finely chopped
- 2 large cloves garlic, pressed
- 1/2 cup roasted red peppers, finely chopped tips & tricks
- 1/4 tsp. dried basil
- 1/4 cup dry white wine (substitute chicken stock)
- 1 cup 35% heavy cream
- 1 1/2 cups (1/2 lb.) crab meat, roughly chopped
- 2 tsp. cooking sherry
- 1/4 tsp. hot paprika
- 1 pinch white pepper
- ground Himalayan pink salt, to taste
- 1/3 cup grated Grana Padano cheese, plus more for garnish
- 1 tbsp. fresh parsley, chopped tips & tricks
In a large pot filled with boiling salted water, add pasta and cook according to package instructions. Drain and set aside.
In a deep skillet over medium heat, add oil and butter. When hot and melted, add shallots and sauté for 2 minutes. Add garlic and sauté for 1 minute. Add roasted red peppers and basil; sauté for 1 ½ to 2 minutes.
Pour in wine and reduce to half.
Pour in cream, stir and when it starts to simmer, add crab meat. Bring back to a simmer, reduce the heat to low and add cooking sherry, hot paprika, white pepper, sea salt and cheese. Stir and let simmer for 2 minutes.
Add pasta and stir until well coated. Sprinkle with parsley and stir.
Serve in a warm bowl and sprinkle on more cheese if desired.
