Ingredients

  • 3 tbsp. Grana Padano cheese (substitute Parmesan), grated
  • 2 tbsp. Dijon mustard
  • 1 tbsp. red wine vinegar
  • 1/4 cup extra virgin olive oil tips & tricks
  • 1 tbsp. honey tips & tricks
  • 1/4 tsp. dried oregano
  • 1/8 tsp. ground Himalayan sea salt
  • 1/4 tsp. freshly ground black pepper, or to taste (I always use mixed peppercorns)

Directions

  • In a medium bowl, add cheese, mustard and vinegar. Mix and then slowly whisk to emulsify the olive oil – if you go too fast, it won’t combine properly.
  • Continue whisking while slowly adding the honey.
  • Season the vinaigrette with oregano, sea salt and freshly ground black pepper. If not using it right away, store in the refrigerator.
