Ingredients

  • 4 large pork loin chops, patted dry
  • 1/3 cup honey tips & tricks
  • 2 tbsp. Sweet & Spicy German Mustard (substitute stone-ground mustard) see Recipe
  • 2 tbsp. Dijon mustard
  • 2 tbsp. freshly squeezed orange juice tips & tricks
  • 2 tbsp. canola oil tips & tricks
  • 3 large cloves garlic, pressed
  • 1/2 tbsp. Herbes de Provence see Recipe
  • 1/2 tsp. onion powder
  • 1/4 tsp. cayenne pepper
  • ground Himalayan pink salt, to taste
  • freshly ground black pepper, to taste (I always use mixed peppercorns)

Directions

  • In a medium bowl, add honey, both mustards, orange juice, oil, garlic, Herbes de Provence, onion powder, cayenne pepper, salt and black pepper. Whisk until well blended.
  • Place the pork loin chops into a large re-sealable plastic bag and pour the marinade over. Close the bag and gently toss it around to coat the meat. Let the chops marinate for 30 minutes at room temperature.
  • Bring the barbecue between 450ºF to 500ºF.
  • Remove the pork chops from the bag to a plate and pour the marinade in a small saucepan. Whisk it and turn the heat on medium; simmer gently while grilling the meat.
  • Place chops on the grill and cook 4 to 5 minutes per side or until the internal temperature reaches 145ºF.
  • Remove from the heat and tent a piece of foil over. Let them rest for 5 to 7 minutes.
  • When ready to serve, pour hot marinade over.
