- 3 cups rolled oats
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/2 cup sweetened coconut flakes
- 1/4 cup chopped walnuts
- 1/4 cup slivered almonds tips & tricks
- 1/2 tsp. fleur de sel
- 3/4 cup good quality maple syrup tips & tricks
- 3/4 cup brown sugar, such as demerara
- 1/4 cup coconut oil tips & tricks
- 1/2 tbsp. pure vanilla extract
- 1/4 cup dried raisins
- 1/4 cup dried cranberries
- 1/4 cup dried blueberries
Preheat oven to 300ºF and line two large baking sheets with lightly greased foil; set aside.
In a large bowl, combine oats, sunflower seeds, pumpkin seeds, coconut flakes, walnuts, almonds and salt; set aside. In a pot over medium heat, add maple syrup, brown sugar, coconut oil, and vanilla extract. Stir well and cook for 3 to 4 minutes until it gets hot but not boiling. Pour the maple syrup mixture over the dry ingredients and, using a spatula, stir until well coated.
Divide the mixture onto the prepared baking sheets and spread out evenly.
Transfer to the preheated oven and bake for 25 to 30 minutes, stirring often (mix from the outside in), and rotating sheets halfway through cooking.
Remove from the heat, cool off a little and transfer to a large bowl. Add dried fruit and mix well.
Cool off completely before transferring to an airtight container.
