Grilled Cheese Sandwich

Ingredients

bread

American cheese

tbsp.
red onions, finely chopped
4

tomatoes
optional
freshly ground black pepper, to taste (I always use mixed peppercorns)

tbsp.
room temperature butter, or as needed
Directions
Place 2 slices of cheese, overlapping, on 4 pieces of bread and top with onions (
*see footnote
); season with freshly ground black pepper.
Place bread slice on top of each and spread butter on top only, making sure to cover the entire surface.
Place the sandwiches on a baking sheet lined with foil and transfer under the broiler; toast until golden brown, about 2 minutes.
Remove from the heat, flip them over and spread butter all the way to the edges.
Return the sandwiches in the oven and bake under the broiler for 2 minutes as well or until nicely toasted.
Notes
Footnote:
If using tomato slices, place them on top of the onions before seasoning with freshly ground black pepper.
