- 2 - 12 inch pizza crusts see Recipe
- 7-8 tbsp. tomato paste tips & tricks
- 2 medium chicken breasts, poached and shredded tips & tricks
- 30 thin slices red onion (15 per pizza), Lyonnaise cut tips & tricks
- 30 thin slices red pepper (15 per pizza)
- 1 tbsp. Greek seasoning (1/2 tbsp. per pizza) see Recipe
- 1/2 tbsp. dried basil (1 1/2 tsp. per pizza)
- garlic salt, to taste
- 12 medium cherry tomatoes, halved (6 per pizza)
- 2 cups feta cheese, small cubes (1 cup per pizza)
- 1 can (2.24 oz/64g) sliced black olives, drained (1/2 can per pizza)
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- extra virgin olive oil, drizzled over tips & tricks
Preheat oven to 500ºF.
Spread tomato paste evenly on both pizza crusts. Add shredded chicken, onions and red peppers.
Season with Greek seasoning, basil and garlic salt before adding cherry tomatoes, feta cheese and black olives.
Add freshly ground black pepper and then drizzle olive oil on top.
Transfer to the preheated oven and bake for 10 to 12 minutes or until the crust is golden brown.
Remove from the heat and let it sit for 5 minutes before slicing.
