Greek Pizza

Ingredients

  • 2 - 12 inch pizza crusts see Recipe
  • 7-8 tbsp. tomato paste tips & tricks
  • 2 medium chicken breasts, poached and shredded tips & tricks
  • 30 thin slices red onion (15 per pizza), Lyonnaise cut tips & tricks
  • 30 thin slices red pepper (15 per pizza)
  • 1 tbsp. Greek seasoning (1/2 tbsp. per pizza) see Recipe
  • 1/2 tbsp. dried basil (1 1/2 tsp. per pizza)
  • garlic salt, to taste
  • 12 medium cherry tomatoes, halved (6 per pizza)
  • 2 cups feta cheese, small cubes (1 cup per pizza)
  • 1 can (2.24 oz/64g) sliced black olives, drained (1/2 can per pizza)
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • extra virgin olive oil, drizzled over tips & tricks

Directions

  • Preheat oven to 500ºF.
  • Spread tomato paste evenly on both pizza crusts. Add shredded chicken, onions and red peppers.
  • Season with Greek seasoning, basil and garlic salt before adding cherry tomatoes, feta cheese and black olives.
  • Add freshly ground black pepper and then drizzle olive oil on top.
  • Transfer to the preheated oven and bake for 10 to 12 minutes or until the crust is golden brown.
  • Remove from the heat and let it sit for 5 minutes before slicing.
