Garlic Herb Butter, melted and room temperature

cloves garlic, pressed

olive oil

hot paprika, or to taste
1/2
tsp.
freshly ground black pepper, or to taste (I always use mixed peppercorns)
1 1/2
lbs.
mixed baby potatoes, washed and halved
1 1/2
tbsp.
fresh chopped parsley, for garnish

Directions
Preheat oven to 400ºF and line a baking dish with foil that has been lightly greased with cooking spray; set aside.
In a small bowl, add melted
garlic herb butter
, pressed garlic,
oil
, hot paprika, salt and pepper; mix well.
In another large bowl, add prepared potatoes and pour over the garlic butter mixture; toss to coat.
Drop the potato mixture into the prepared baking dish and spread evenly in a single layer.
Transfer to the preheated oven and bake for 20 minutes. Careful flip them and cook for an additional 20 minutes or until tender and golden brown.
To make them crispy, turn the broiler on “Low” for 5 minutes, flipping halfway through.
Before serving, sprinkle on fresh chopped
parsley
.
