Ingredients

  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup good quality cocoa powder
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground Himalayan pink salt
  • 1 1/2 cups whole milk
  • 2 large free-range eggs, beaten
  • 1/3 cup unsalted butter, melted and cooled
  • 1 tsp. pure vanilla extract
  • 3/4 cup semi-sweet chocolate chips Footnote
  • cooking spray, for waffle iron
  • whipped cream, for garnish see Recipe
  • 8 large strawberries, hulled, washed and sliced tips & tricks

Directions

  • Preheat waffle iron.
  • In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.
  • Add milk, beaten eggs, butter and vanilla extract. Stir until the mixture is smooth, cleaning the sides and bottom of the bowl. Fold in chocolate chips.
  • Grease waffle iron with cooking spray and add a couple ladles of the batter. Close the lid and cook until golden and crisp, about 4 minutes.
  • Transfer onto a wire rack to let moisture escape.
  • To keep them warm while doing the others, put them in a plate and transfer to a 170ºF preheated oven.
  • Spoon some whipped cream and top with sliced strawberries. Makes 8 6-inch waffles.

Notes

Footnote: I prefer 1/2 cup of semi-sweet but it can be anything from 1/2 to 1 cup so adjust it to your liking.
