Ingredients

  • 1 tbsp. butter
  • 2 tbsp. shallots, finely chopped
  • 1 medium clove garlic, pressed
  • 1/2 cup tawny Port
  • 1/4 cup low-sodium beef broth
  • 1 tbsp. granulated sugar
  • 1/2 tbsp. balsamic vinegar
  • 1 cup Bing cherries, stems removed, pitted and halved
  • 1/2 tsp. fresh thyme leaves, finely chopped tips & tricks
  • 1/4 tsp. freshly ground black pepper, or to taste
  • 1/4 tsp. ground Himalayan pink salt, or to taste

Directions

  • In a small skillet over medium heat, add butter and when sizzling, add shallots and garlic; sauté for 1 minute.
  • Add port, beef broth, sugar, vinegar, and cherries; stir well. Cook until the liquid has reduced by half, 15 minutes, stirring occasionally.
  • About 3 minutes before time is up, season the sauce with thyme, salt and pepper.
