- 1 tbsp. butter
- 1 tbsp. unbleached all-purpose flour
- 2 cups cold low-sodium chicken broth
- 1/3 cup ketchup
- 2 tbsp. brown sugar, such as demerara
- 1 tbsp. Worcestershire sauce
- 1 tbsp. white vinegar
- 1 tbsp. hot sauce such as Frank's® RedHot
- 2 tsp. hot paprika
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/2 tsp. ground Himalayan pink salt
- 1/2 tsp. freshly ground black pepper (I always use mixed peppercorns)
- 2 tbsp. 35% heavy cream
To make the roux...In a medium pot over medium heat, add butter. When melted, add flour and whisk the ingredients constantly for about 3 minutes. Pour in cold chicken broth, whisking constantly until well incorporated.
Add ketchup, brown sugar, Worcestershire sauce, white vinegar, hot sauce, hot paprika, garlic powder, onion powder, sea salt and freshly ground black pepper; whisk well and increase the heat to high.
When it boils, reduce to medium-low and simmer for 30 minutes, stirring occasionally.
About 5 minutes before time is up, add heavy cream, whisk and cook for the remaining time.
