BBQ Pulled Pork Pizza

- 1 can (7.5 oz./213 ml) pizza sauce Footnote
- 2 tbsp. chipotle purée tips & tricks
- 6 tbsp. your favorite BBQ sauce, or more to taste
- 2 cups pulled pork, cooked see Recipe
- 1/2 large poblano pepper, seeded and thinly sliced
- 1/2 medium white onion, sliced (Lyonnaise cut) tips & tricks
- 1 1/2 cups Monterey Jack with Jalapeño cheese, grated
- 1 1/2 cups sharp Cheddar cheese, grated
- 1 tbsp. chopped cilantro, for garnish tips & tricks
Preheat oven to 500ºF.
Dust two 12-inch pizza pans with cornmeal before placing the pizza dough.
In a small bowl, combine pizza sauce with chipotle purée. Spread the sauce mixture evenly on the two pizza doughs, leaving about 1-inch from the edges. Add BBQ sauce and spread evenly as well.
Place 1 cup pulled pork on each pizza dough, dispersing evenly. Add slices of poblano and white onions. Divide the cheeses onto two pies and spread out evenly. Transfer to the preheated oven and bake for 13 to 15 minutes or until the crusts are golden and the cheeses are melted.
Remove from the heat and let it sit 10 minutes before serving. Sprinkle some chopped cilantro.
