- ½ cup mayonnaise see Recipe
- ¼ cup sour cream
- ¾ cup cilantro tips & tricks
- 1 large jalapeño pepper, seeded, and ribs removed
- 2 large cloves garlic, roughly chopped
- 1 tbsp. ají amarillo paste Footnote
- 1 tbsp. lime juice tips & tricks
- ground Himalayan pink salt, to taste
- freshly ground mixed peppercorns, to taste
In the jar of a blender, add all the ingredients, put the lid on, and process until the mixture is perfectly smooth and creamy.
Scoop the sauce into a container, cover, and transfer to the fridge for at least 2 hours. Yields 300 ml/1 ¼ cups.
