Ají Verde • Spicy Green Sauce

Ingredients

  • ½ cup mayonnaise see Recipe
  • ¼ cup sour cream
  • ¾ cup cilantro tips & tricks
  • 1 large jalapeño pepper, seeded, and ribs removed
  • 2 large cloves garlic, roughly chopped
  • 1 tbsp. ají amarillo paste Footnote
  • 1 tbsp. lime juice tips & tricks
  • ground Himalayan pink salt, to taste
  • freshly ground mixed peppercorns, to taste

Directions

  • In the jar of a blender, add all the ingredients, put the lid on, and process until the mixture is perfectly smooth and creamy.
  • Scoop the sauce into a container, cover, and transfer to the fridge for at least 2 hours. Yields 300 ml/1 ¼ cups.
