Mexican Chicken Sub

Not your average sub... it has so many great flavors to enjoy... yum! This is a tasty way to enjoy grilled chicken breast!

Ingredients

  • 2 large chicken breasts, grilled and sliced
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 1/2 large lime, freshly squeezed tips & tricks
  • 4 submarine sandwich buns, ciabatta or Italian rolls
  • 1/2 cup chipotle mayo, or more to taste tips & tricks
  • 4 slices bacon, cooked tips & tricks
  • 2/3 cup guacamole see Recipe
  • 1/2 cup shredded cheese of your choice Footnote
  • 1-2 large fresh ripe tomatoes, sliced

Directions

  • Preheat the barbecue to 500ºF.
  • Season chicken breasts with freshly ground black pepper; set aside.
  • Place chicken on hot grill, close the lid and cook for 5 to 7 minutes per side or until cooked through.
  • Slice chicken and squeeze fresh lime juice on top.
  • Spread chipotle mayo on the bottom half of each roll and top with sliced chicken, bacon, guacamole, cheese and sliced tomato.

Notes

Footnote: For the cheese, I used Mexicana and Habañero mixed together.
