- 24 (3" x 3") egg wonton wrappers
- 2 cans (100g each) slightly smoked sardines in olive oil, drained
- 2 ounces light cream cheese, softened
- 2 tbsp. mayonnaise see Recipe
- 1 tbsp. red peppers, finely chopped
- 1 tbsp. freshly squeezed lemon juice tips & tricks
- 1/2 tbsp. fresh chives, finely chopped plus more for garnish tips & tricks
- 4-5 dashes hot sauce such as Cholula®, or more to taste plus more when serving
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 1 pinch ground Himalayan sea salt
- sweet paprika, for garnish *optional
Preheat oven to 350ºF
Fit wonton wrappers into each hole of a greased mini muffin tin. Spray wontons lightly with cooking spray.
Transfer to the preheated oven and bake for 8 to 10 minutes or until golden and crispy.
Remove them from the heat, cool for 2 minutes and then remove from the pan.
While the wrappers are baking, in a bowl combine sardines, cream cheese, mayo, red peppers and lemon juice; stir and mash. Add chopped chives, hot sauce, freshly ground black pepper and salt; stir. Taste and adjust if needed; set aside. When wrappers are cool, fill (*see footnote) with the sardine mixture and garnish with paprika, chives and a couple drops of hot sauce.
Footnote: Fill up strictly the amount you'll be serving otherwise they’ll get soggy if they're not eaten right away.
Kitchen Tools: The Wilton 24-Cup Mini Muffin Pan can be purchased in the "SHOP" section of Club Foody.
