Mango Purée with Mixed Berries and Cointreau

Ingredients

  • 2 large mangoes, peeled, stone removed and diced tips & tricks
  • 2 cups (500 ml) vanilla yogurt
  • 1/2 cup raspberries tips & tricks
  • 1/2 cup blackberries
  • 1/3 cup freshly squeezed orange juice tips & tricks
  • 1 ounce Cointreau
  • 1 tbsp. orange zest
  • 1/4 tsp. powdered sugar tips & tricks

Directions

  • In the jar of a blender, add mango and puré until smooth.
  • In 4 glass dessert bowls, layer puréed mango, yogurt then the remaining puréed mango, leveling out each layer.
  • Place the bowls on a baking sheet lined with a silicone mat and transfer to the refrigerator for 2 hours.
  • Meanwhile in a medium bowl, combine mixed berries with orange juice, Cointreau, orange zest and powdered sugar. Stir and transfer to the refrigerator for 2 hours as well.
  • When ready to serve, top each glass with the macerated berries using a slotted spoon.
